If this guy was a non drinker, and was considered by people who knew him to be a non-drinker (ie possibly on religious, athletic, health grounds, etc) then wouldn't EAR think this was a clever red herring?
Think about the hassle of carrying 2 full beer cans around. They would be warm & shaken by the time you got to drink them! Especially when the chances are you will find a cold beer in your victim's fridge anyway.
He possibly brought empty cans with him, or tipped full ones down the sink (like the 'drugs').
In my opinion, he is trying to portray a character opposite to what he is in real life.
If I remember correctly, there was at least one instance where beer was detected on his breath but it certainly wasn't the norm. I'm just not sure if this guy is thinking "If I leave beer cans they won't look at me because everybody knows I don't drink" or similar. IMO, that wouldn't be very exclusionary in light of everything else....but who knows if he somehow thinks that would serve as misdirection.
However, I don't doubt that portraying a character opposite to what he is in real life might hold center stage when he's finally identified.
